Obviously, Apple provides no support for running other operating systems on your iPod, and attempting to do so likely will invalidate your warranty.
However, if your truly adventurous, please refer to the iPodLinux Project for instructions on how to install Linux on the original iPod, iPod 2G, or iPod 3G model. Subsequent and currently shipping models are not supported even by the iPodLinux Project.
